Smoke at 225 to 250°F for 4 to 5 hours. Baste or mop the ribs occasionally, but don’t open the grill too often. Maintaining a steady temperature is important. Apply the BBQ rub evenly over the entire surface of the rack of ribs. Set aside. Preheat the gas grill to a cooking temperature between 250°F and 300°F. Configure your grill for indirect cooking with enough space for the ribs to cook without direct heat. Prepare smoke packets (see above).
Set the flat grate in place on the grill. Close the lid and top vents and adjust the bottom vents to 1/2" open. After 15 minutes, check the temperature and adjust the bottom vents as needed to stabilize the temperature at roughly 275 degrees F. Arrange the ribs on the grate meat side up and immediately close the lid.
Instructions. Preheat oven to 300°F. In a small bowl combine the brown sugar, salt, smoked paprika, garlic powder, mustard powder, cumin, and crushed red pepper flakes, if using. Optional Step: Remove the membrane from the bone side of the ribs.
Bake in the preheated oven for 45 minutes. Baste the ribs with their juices halfway through cooking. In a medium saucepan, mix together ketchup, water, vinegar, Worcestershire sauce, mustard, butter, brown sugar, hot pepper sauce, and salt; bring to a boil. Reduce heat to low, cover, and simmer barbeque sauce for 1 hour.
